Manic Monday Recipe~ Balsamic Roasted Potatoes

I have been making this recipe for the past few years, I love using it as a side.  It would be a fabulous side for any of your holiday dinners.  Enjoy!

Ingredients:
Balsamic Vinegar
5-7 Of Your Favorite Potatoes cut up in small chunks (I like using baby reds for this)
Olive Oil
Kosher/Sea Salt

Directions:

Start by adding a thin layer of olive oil on the bottom of a cake pan.
Add the potatoes to the pan, and drizzle with olive oil, salt and vinegar.  I like a lot of vinegar, it really helps the potatoes caramelize and get a little crunchy!
 Bake at 400 degrees for about 45-50 minutes.  About half way through, take a spatula and mix up the potatoes so that they all get a chance at direct heat.  If they look a little dry, add a little more vinegar and olive oil.
Optional: Serve with a sprinkling of grated parmesan.

  4. Looks sooooo good! And easy, equally important, lol. Hubs is cook here, have to see if he'll go for trying vinegar with his taters.
