Manic Monday Recipe~Brunch Enchiladas


I found this recipe in the Taste of Homes 2001 Annual Recipes Cookbook and decided to try it.  I am so glad that I did.  We are the family that loves breakfast for dinner, so that's what we made it for, but obviously this is a great choice for a brunch with the family or friends. It can sit over night, meaning little prep in the morning!  I hope you enjoy the recipe!

Ingredients:
2 C. Cubed Fully Cooked Ham
1/2 C. Chopped Onions
10 (8 inch) Tortillas
2 C. Shredded Cheddar Cheese (Divided)
1 Tbsp. All-Purpose Flour
2 C. Half-and-Half Cream or Milk
6 Eggs Beaten
1/4 tsp. Salt and Pepper


Directions:
Combine Ham, onions and 1 C. Cheese.


Sprinkle Mixture onto each tortilla.  Roll the tortilla and place in a greased baking dish seam side down.

In a bowl, combine flour, milk, eggs, salt, and pepper.  Pour over tortillas.  Cover and refrigerate overnight if you are prepping.  Let it sit out a 1/2 hour before baking.) 

Other wise, bake covered at 350 degrees for 25 minutes.  Uncover and bake for 10 more minutes with remaining 1 cup cheese sprinkled over enchiladas.

Manic Monday Recipe~ Cinnamon Roll Apple Pies


This is ridiculously good!  I found this great recipe in Taste of Homes 5-Ingredient Cookbook. I made a few modifications to the recipe and love how it turned out.  (It was originally made to be a pizza.)

Ingredients:
1 Tube of Refrigerated Cinnamon Rolls
1 Can (21 oz.) Apple Pie Filling
1/4 C. Brown Sugar
1 Tbsp. Melted Butter

Directions:
Set cinnamon roll icing aside, and preheat oven to 400 degrees.  Then roll each cinnamon roll so that it is about 1 cm. thick.
 Place the cinnamon rolls onto a greased cookie sheet.  Tin foil makes for an easy cleanup!
 Bake the cinnamon rolls for about 6-8 minutes. This way you don't have a doughy center and will help keep your apples from sliding off the rolls.  Then place a small heap of apple pie filling onto the center of your roll.
 Mix the brown sugar and melted butter together.  Crumble the mixture over each of your mini pies.
 Bake for another 7 minutes.  Then drizzle each pie with icing.

Manic Monday Recipe~ Breaded Pork Chops & Smashed Potatoes


I guess yesterday was MANIC, I didn't remember to post this recipe!  I am so excited to share this with you all.  I made it last week for the fam. and wanted to post it then.  Please try this, it's easy and so DELICIOUS!  I modified it a bit from the original recipe.  The recipe is from Taste of Home's 5 Ingredient Cookbook.

Ingredients (Pork Chops):

1 C. Italian Seasoned Bread Crumbs

2 T. Grated Parmesan Cheese
1/2 C. Ranch Dressing
4-6 Pork Chops

Directions:
Brown each side of your chops for about 2 minutes each. Preheat oven to 375 degrees.  Mix bread crumbs and cheese in a shallow dish.
 Place browned chops in ranch dressing and coat.
 Then, place the ranch coated chops into your bread crumb and cheese mixture.
 Place on a greased pan or cookie sheet, and bake uncovered for 55 minutes.  (use a meat thermometer to check that it is cooked thoroughly.)  If you flatten out your pork chops before browning, baking time can be reduced to about 25-30 minutes.


 Ingredients (Smashed Potatoes):

2-3 Pounds Potatoes Chopped into small Chunks

3 Tbsp. Butter or Olive Oil
3 Tbsp. Lemon Juice
2 Tbsp. Parsley
Salt and Pepper to Taste


Directions:

Boil potatoes until tender.

 Drain and place potatoes into a frying pan. Drizzle with Lemon Juice, Butter/Olive Oil, and Parsley.  Stir occasionally allowing potatoes to fall apart and brown a bit.  Cook for an addition 10 minutes.  Finish with salt and pepper.

Manic Monday Recipe~ Ham and Cheese Quiche


I found this recipe on Freezer Meals for Us, and modified it a bit to fit my families taste buds.  I love making quiche for breakfast and dinner! Think about all of the delicious ingredients you could at to this!  Peppers, mushrooms, sausage, garlic, bacon, the list goes on!  It's a delicious and easy recipe.  Enjoy!

Ingredients:
9" pie shell, unbaked
5 large eggs
2 cups heavy cream/milk
1 tbs butter, softened
salt & pepper 
Dash of Parsley 
1/4 C. ham, cooked and chopped
2 cups shredded cheddar or other sharp cheese
1/4 C. Chopped Red Onion

Directions:
Preheat the oven to 425 degrees.
Grease pie pan and lay out Pie shell.  On the bottom of the shell, spread softened butter.
Lightly beat eggs in a bowl, then add cream, salt and pepper, and parsley.  Mix well.
In another bowl, mix onions, cheese and ham.  Place mixture at the bottom of the pie shell.
Pour the egg mixture into the pie shell.
Bake at 425 degrees for 15 minutes, then reduce heat to 300 degrees and bake for another 35 minutes.
