For Christmas, my mother-in-law got me a really cool Rehrucken Cake Pan from Pipka's of Door County, WI. The cake pan looks like this:

Along with the pan, was an oh so yummy recipe. I love the flavor of almonds, but I'm one of those people who love the taste of nuts, but not chunks of them in my food. So I was so excited to get this recipe. The sliced almonds are optional.
I made this last weekend when I had family here, and by the time I went to take a picture it was GONE! I will post one as soon as I make it again.
This is a fabulous cake for a lazy day where you want to "graze!" Or, it is also a fabulous cake for a brunch.

Ingredients:
1 1/4 C. Sugar
1 Egg
1 1/2 tsp. Pure Almond Extract
2/3 C. Milk
1 1/2 C. Flour
1/2 tsp. Baking Soda
Directions:
Beat the first 4 ingredients in a bowl. Next, mix in the flour and baking soda.

Then butter and flour the Rehrucken pan. Pour the batter into the pan, and sprinkle with sliced almonds (optional: if you choose to use the almonds, they will be like a crust on the bottom since you flip the cake to get it out of the pan.
Bake at 350 degrees for 38-42 minutes until golden brown.
Cool the cake in the pan for about 7 minutes, then invert cake onto a cooling rack.
Before serving, sprinkle with powdered sugar.
