Manic Monday Recipe~ German Potato Salad

This is one of those recipes that is great for a side dish at a bbq or family get together.  I don't love mayo, so this is my favorite type of potato salad.  I love the vinegar taste that this potato salad has.  It's a sweet and tangy kind of salad.  Hope you enjoy the recipe!


Ingredients:
1 C. Diced Bacon
1 C. Onion
2 tsp. Salt
3 Tbsp. Flour
2/3 C. Sugar
2/3 C. Vinegar
1 1/2 C. Water
8 C. Cooked Sliced Potatoes


Directions:
Fry bacon and drain.  Dice bacon.  Return 4 Tbsp. fat to skillet, add onion, salt, and flour.  Cook gently.  Next, add water, vinegar and pepper.  Bring to boil.  Pour over potatoes and bacon in a 3 qt casserole dish.  Cover and bake at 350 degrees for 30 minutes.  Another option is to finish by placing the bacon, potatoes, and cooked mixture to a crock pot and cook.

  1. sounds yummy! We lived in Munich for a good 3 years, and I was absolutely addicted to their potato salad - different version then this, but still vinegar based. Before I left I grabbed a good Bavarian cookbook so I would always know how to make it :).
