Manic Monday~Twice Baked Potatoes





 Today's recipe is a pretty standard recipe, but ooohh soooo good!  This can me a main dish or a side dish.  

Ingredients:
6 Potatoes
Bacon Bits (Shh, don't tell I didn't use fresh bacon!)
16 oz. Tub of Sour Cream
1 Stick of Butter
1 1/2 C. Shredded Cheddar Cheese
1/2 C. Shredded Cheese (Topping)
Chives

Directions:

Clean your potato, then place on a piece of aluminum foil and sprinkle with Sea Salt or Kosher Salt.


Wrap those puppies in foil, and bake at 350 for about an hour and a half.



 Let cool.


 Once cool, slice the top of each potato off and throw away. (If there is potato on it, you can scoop that out and put into a large mixing bowl, no one likes to wast!)


 Scoop out the center of the potato leaving about a cm. edge.  This ensures that your potato doesn't fall apart.  I like to use a melon baller rather than a spoon, it gives me a little more control.


 Mix all ingredients (except for chives and 1/2 cup shredded cheese).  I just mash the potatoes with my fork.  If you prefer your potatoes smooth, use a hand mixer to mix potatoes and sour cream prior to mixing with other ingredients.


Add your mixture back into your potato shells.


 And this happens to us all, don't beat yourself up!  Just serve that one to yourself!


 Then bake at 350 for about 20 minutes or until warm.  Once cooked, sprinkle with cheese and chives.
THEN DEVOUR them!
