Pasta Salad (Greek or Italian)

I can't take credit for this recipe, but it is one of my favorites to add as a side dish.  My mother-in-law shared this with me a few years ago.  I have given different options of certain ingredients so that you can theme your salad.


Ingredients:
1 Box of noodles (Rigatoni, bow tie, or elbow)
1 16 oz Greek or Italian Salad Dressing
1 Large Green Pepper (or a mixture of red, yellow, and green)
1 Medium Sized Red Onion
1 Canister of Crumbled Feta Cheese or cubed Mozzarella
*Optional* Can of sliced black or green olives
*Optional* Can of Artichoke


Directions:
Prepare the noodles as described on the box.  Once drained, I like to drizzle some Extra Virgin Olive Oil on the noodles so that they aren't sticky.  Let the noodles cool a bit.
Chop the pepper and red onion.
Mix all of the chosen ingredients with the cooled noodles.  
It's best when it has been placed in the refrigerator for at least an hour.

**I always like to have a little extra dressing on hand so that if the salad dries out I can "dress" it up ;) **
