Manic Monday Recipe~Noodle and Veggie Casserole




So I know this looks like one of those 70's casserole type dishes that your mom or grandma made.  Well, it is, but it's so delicious.  This is a recipe that my mom would make for the family all of the time.  It's very addicting.  The peas and corn work so great with the tomato sauce.  It's so good, I beg you to try it. It's a very inexpensive meal that can feed your family dinner with leftovers to freeze or for lunch.  Enjoy!
Ingredients:
1/2 White Onion
1 Box Small Macaroni Noodles
4 Stalks of Celery
1 Pound Ground Turkey (or beef)
1 Bag Frozen Peas
1 Bag Frozen Corn
2 Cans of Stewed tomatoes (Small or large chunks based on your preference)
1 Large can of Tomato Juice
1 Tbsp. Italian Seasoning
Salt and Pepper to Taste
Directions:
Begin by sauteing your onions and celery.
 Next, add your beef/turkey and brown until thoroughly cooked.  Add your seasonings while cooking.
 Then, cook your noodles according to the box.
 During the last two minutes of your noodles boiling, add your frozen veggies.
 Once the noodles and veggies are cooked, strain and add back into your stock pot.
 Then add your meat into the pot.
 Next, add the stewed tomatoes.
 Stir the ingredients.
Add the tomato sauce.
 Once all of your ingredients are added and mixed well, let it simmer on low for about 10-15 minutes.  Stir to ensure that all of the ingredients blend well and are warm.
