Manic Monday Recipe~ Cherry Cheesecake Cupcakes


Here's another great recipe!  My mom used to make these all of the time for parties.  They are super easy and a great treat to eat!   



Ingredients:
24 Cupcake Liners
24 Vanilla Wafers
2- 8oz Cream Cheese Softened
3/4 cup sugar
2 eggs
1T. lemon juice 
1 tsp vanilla 
1 can (20-21 0z) Cherry, Blueberry, Peach, or Strawberry Pie Filling 

Directions:

Line cupcake pans with liners.  Place a vanilla wafer in bottom of each liner.  

In small bowl beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy.  

The day I made these, I was going to a pink party for my little lady, so I added red food coloring to  make them pink.

Fill liners 3/4 full with cheese mixture.  

Bake in preheated 375 oven for 15 minutes or until set.  

Top each with spoonful of filling.  Chill.

Manic Monday Recipe~ Pork Chop Recipe


This is one of those go to easy meals to prepare for dinner.  My mom would make this once a week while growing up.  I love mixing my corn and potatoes, anyone else like to do that?
Make sure to use enough cream of chicken/mushroom, so that you have a gravy for your potatoes!  Hope you like this recipe!

Ingredients:
(mashed potato recipe follows)

Pork Chops:
4 Boneless Pork Chops
10 oz. Can Cream of Chicken or Mushroom
Salt and Pepper to taste
Drizzle of Olive Oil

 Instructions:
Preheat oven to 375 degrees.

Begin by heating up a drizzle of olive oil in your pan.  Then sear each side of the pork chops for about 2-3 minutes until golden brown.

 Meanwhile, prepare a 9 x 13 pan by spreading the cream of chicken over the bottom.

 Once both sides are seared, add the pork chops on top of the cream of mushroom.  Bake for about 45 minutes.

Mashed Potatoes
Ingredients:
10 of Your favorite Small-Medium Potatoes
1 C. Whole Milk or Cream (Can use Skim Milk)
1 Stick of Salted Butter
Salt and Pepper to Taste

Directions:
Begin by peeling and cutting your potatoes in half.  Add to a salted pot of cool water.  (Never boil the water before adding potatoes)  Place on high heat and begin to boil until you can stick a fork through the potato.
 Once cooked, add your milk, butter, salt and pepper and blend with a mixer.
 Get your potatoes as smooth as possible.
