Manic Monday Recipe~ Enchilada Casserole


I found this yummy recipe on Pinterest, and decided to give it a try.  I made a few modifications to the recipe, and love how it turned out.

Ingredients:
1 pound ground beef (or ground turkey)
1 medium onion, diced
1 can Cream of Chicken or Mushroom Soup (whatever your preference is, I used chicken.)
1 cup of whole milk
15 oz. Can Diced Tomatoes with Chiles
15 oz. Can Refried Beans
1 Bag Shredded Cheddar Cheese
10 Small Tortillas
Fresh or Dried Cilantro

Directions:
Begin by heating some olive oil in a pan and caramelizing your onions.
 Add your meat and cilantro, and cook thoroughly
 Cut each tortilla into eights.

 Once your meat is cooked, add the milk and cream of chicken.
 Next, add your refried beans.
 Lastly, add the diced tomatoes.
 Start your casserole dish by spraying it with non-stick spray and adding a layer of tortillas.
 Next, add a layer of the meat mixture.  Cover the meat with a layer of cheese.
 Next, add another layer of tortillas, meat, and cheese.
 Continue this process until your ingredients are gone.  Make sure the last layer is cheese.  I added an extra layer of cheese after my last tortilla layer.
 Then bake for 35 minutes at 350 degrees.

  8. Is it cream of chicken or cream of mushroom?? You said cream of mushroom in the ingredients, but in the directions you said cream of chicken.

  9. Hey there, I used cream of chicken in mine, but you could use mushroom if you like the small bits of mushroom. Thanks for letting me know, I will change that.

  10. I have made this before without the cilantro and beans, so will try that..sounds great. I use the combination cream of chicken and mushroom soup, that way one can covers both. I also use corn tortillas. I am going to try your recipe this weekend...looks great!
