Manic Monday Recipe~ The Best Chocolate Chip Cookies!


While visiting my family in Wisconsin, my sister-in-law made the tastiest cookies.  They are similar to the Neiman Marcus Cookies.  The best part is that you get the taste of oatmeal, but not the flakes because you grind them up.  Hope you enjoy this recipe, I know I'll be making them all of the time!

Ingredients:
2 1/2 C. Oatmeal
2 C. Flour
1 tsp. Baking Powder
1 tsp. Baking Soda
1/2 tsp. Salt
1 C. Room Temp. Butter
1 C. Sugar
1 C. Brown Sugar
2 Eggs
1 tsp. vanilla
12 oz Semi-sweet Chocolate Chips
4 oz. Milk Chocolate Chips 

Directions:
Preheat oven to 375 degrees.  

Blend oatmeal in food processor/blender until fine.

  
Next, whisk together with flour, baking powder and soda, and salt.  

In a separate bowl bowl, beat butter and both sugars until fluffy. (about 3-4 minutes)  

Then, beat in eggs one at a time and add vanilla.  (I like to stab the yolk before beating so that it mixes easier.)

Next, on low mix in flour to sugar mixture.  Then, fold in chocolate chips.

Roll dough into 1 inch balls and place 2-inches apart on a cookie sheet.



Bake for 10 minutes, and let cool on rack.

Enjoy every bite!

  4. Any particular oatmeal or just any kind? I have a container of quick cooking oats in my cabinet that I have been looking to use up before we move and this sounds like the perfect recipe :)
